Creamy Skillet Chicken Recipe

This was another family hit... and it was soooooo easy. A one pot meal. Anna ate 2 helpings. Enjoy!!!

Prep: 5 m inutes
Cook: 25 minutes
Yield: 4 servings

1 can of 98% fat free, reduced sodium cream of chicken soup
1 cup of water
3/4 uncooked white rice
2 cups cooked chicken
2 cups frozen mixed medley

Whisk soup and water in a nonstick skillet until combined. Heat until just boiling, about 2 to 3 minutes. Stir in rice, cover, reduce heat to low, and cook for 20 minutes. Add chicken and mixed vegetables, and stir to combine. Cover and cook an additional 3 to 4 minutes, or until heated through.


How kids can help: Measure the chicken and rice; help thaw veggies by running under cold water.
Per Serving (1 1/2 cups): 350 calories, 4 g fat (2 g saturated), 382 mg sodium, 66 mg cholesterol

Valentine's Day




This is the gift from David & Anna from Valentine's Day this year. I never got around to post it, so here it is. It really says it all considering the very hard time I had last year after having Anna and going thru post partum depression. When David saw it, he knew it was for me. And, I have to agree.




PIANO




Anna loves to play the piano. So, while I was antique shopping a few weekends ago, I came across a childs piano with real keys. I could not pass it up. She loves it and bangs on the keys and sings "Twinkle, Twinkle, Little Star" at the same time. It is so cute it brings tears to my eyes. So here it is... (My hubby does not think it is so cute, because it is so loud, lol)


Mother's Day 2008

This is a little late, but I wanted to post what Anna & David got me for Mother's Day!!! Besides a great day with both sides of our family and a real relaxing day at home, they bought the most beautiful framed glass, pewter cross with a fleur de lis. It is the perfect gift, because Jesus is always with me as a mother and takes care of my family. The picture is good, but it is absolutely beautiful in person.

WORKING MOMS




Lately, I just feel like all is running wild. I got home last night to a MOUND of dirty clothes, a dirty kitchen, dirty floors, unmade beds, unwatered plants (that are starting to die) and toys everywhere. We have been so busy that I just do not have the time or energy to do everything. (David helps a lot, so I will put that disclaimer in now in case he is reading.) Everyday it is work, pick up at daycare, run the errands we have to run, visit family, etc. By the time we get home, Anna may or may not get a bath and it is off to bed we go. I am not complaining because I am so thankful to have the life I do and the ability to do all of these things, but when do you say enough is enough. I am just venting, because this will happen many times again,but it is just so tiring and frustrating. Do you feel that way too?

Working is great, but sometimes it would be nice to have everything done when you get home and not have to do it on your day off or long weekend. I guess I have to work on letting it go a little bit more.

AMERICAN IDOL


So, what are your predictions for American Idol? I want to buy the first CD for David Cook, NOW. I just think he is awesome. David (my hubby) thinks I am nuts, but I just think he will sell millions.

NO CANCER

Just an update, there are no signs of cancer from my spots that were removed last week. It really took an emotional toll on me while waiting for the results. Knowing everything my dad went thru at MD Anderson and his melonoma, I really did not want any bad news. So, for here on out, it will be SHADE, SUNSCREEN and more SHADE.

Cheesy Chicken Recipe

This is a great recipe for your family or if you have to serve a meal for a large crowd:

10 minutes, Feeds 8-10 people

1 yellow onion
1/2 bell pepper
1 stick of butter
1 pkg of No Yolk Egg Noodles
1 can of Rotel
1 can of cream of mushroom soup
4 chicken breasts
1 sm-med block Velveets (1 lb)

Chop onion, bell pepper and chicken into cubes. Boil & drain noodles. Fry/Saute onions, bell pepper in butter until onions are clear. Then add the diced chicken (make sure to season to taste) and fry/saute until fully cooked. Add 1 can of rotel & 1 can cream of mushroom. Cook for 10 minutes add cheese, cut into cubes and let melt. Turn off fire and add egg noodles. Mix well and Enjoy!!!

(This is a Southern recipe, so it can be spicy for some. If you don't like too spicy, add the mild Rotel and less seasoning.)

DAVID BRAG

Today David got a major recognition at work and I wanted to make a blog brag. I really don't blog about him unless he is involved with Anna.

He is such an awesome husband, friend, dad and son. I thank God everyday for him. I hope the best for him in all he does, especially work, where he pours his heart and soul everyday. He deserves everything he receives.

BABY SIGNING TIME

This is such a great company and story that I wanted to share. Anna has really enjoyed signing and it has helped us in our communication. She signs and speaks at the same time, which is awesome. For 19 months old, I feel her vocabulary is far past where it should be and I attribute a lot of it from Baby Signing Time. Check it out!!!

WHITE IS IN, TAN IS OUT

Well, I got my results today... and, everything is ok. There are NO cancer cells. That sounds great to my ears. I have always been a beach bum and sun goddess. Growing up on the water you don't know anything better. It is such a great life. But, starting this summer I will have to learn to enjoy another way. IN THE SHADE. Thank God they make spray on tan salons, because if not I would be glowing. Just a little info I have learned, MD Anderson and my dermatoligist both recommend BLUE LIZARD sunscreen. It is also great for children. David and I have agreed to be very proactive in Anna's sun exposure and sunscreen use. We love the sun, fishing, the beaches and camping, so we will have to find a way to make it last for the rest of our lives. Thanks for the prayers and thoughts, I really appreciate them.

Has anyone ever had brown spots or suspicious areas removed from your skin? I had to have two removed this morning and I will not know the outcome for a week. Oh, what a long week that will be.

3 NIGHTS IN A ROW

We have made it 3 nights without Anna getting in our bed. We are just so excited. It was a little easier than we thought, but harder on us than her. I really missed her sleeping with us the second night. We will get over it. She seems to be sleeping much better and us too. She slept til 9:00 this morning. Wow!!! Seems like this will work.

CAN YOU BELIEVE

ANNA SLEPT IN HER BED ALL NIGHT, SHE EVEN PUT HERSELF TO SLEEP ON HER OWN. We are so excited. We slept so hard we were drooling on our pillows...lol When we woke up this morning, David said, "Is this what it is like not to have kids in our bed?" It is funny how you forget that you used to sleep that way before they were born.

I told Anna she was a big girl now and that she needed to sleep in her room in her bed. She really had no idea what I was saying, but went along with it. (I bet now she is regretting it...) I started to clean her room and change her sheets and bedding, so I decided to have her help me and make a game out of it. She loved it and thought it was so much fun, until it turned 7:30 and I put her in for the night. I gave her a pappie, milk and a book and she cried on and off for about 30 minutes. The funniest thing was she knew not to cry out for me, but for her DADDY. They just know how to push our buttons, especially David's. I thought he was going to cry as he listened to her fake cry out for him.

Say a prayer that this keeps up and WE can sleep like babies again.
